The thermostat is what controls the flow of coolant around the engine and cooling system and will operate once the coolant reaches a certain temperature. Without it, the engine may overheat as the heat isn't being dissipated quickly enough, which could cause you problems.
If you're motorbike is regularly overheating, this could be at fault and so it's worth inspecting it for it's functionality and replacing if necessary.
